Dietetic Internship
Oregon Health and Science University, Portland Oregon 09/2011-present
For
this internship I will be involved in various rotations throughout the
community and in the Portland Veterans Hospital. The
education I receive from this
internship will lead me to sitting for and successfully passing the exam to
become a Registered
Dietitian (RD). Please
see my Graduate Skill Areas to read more about current rotations and what projects I
have completed as well
as what I am learning.
Passages, Area 3 Agency on Aging
California State University, Chico 8/2010-10/2010
For my community nutrition class I have been able to work with a preceptor at Passages to learn more about senior nutrition. Passages is a local agency that provides and supports the critical services and community resources older adults need to live healthier, more rewarding lives.
I have created a nutrition education plan and brochure to implement through Passages. I have been able to hand out the brochures to some seniors, which seems to be informative and appreciated.
Sierra Cascade Nutrition and Activity Consortium
(SCNAC)
California State University, Chico 08/2009-12/2009
After focusing on my schoolwork for a year, I was able to volunteer again as a Community Nutrition Intern for SCNAC, which is a part of CNAP. This internship allowed me to be more involved in community nutrition. I was able to work with some of the same staff that I had worked with previously for the Harvest of the Month Program.
At SCNAC I was actively involved in educating teachers, parents and students about good nutrition and eating habits. I participated in cooking demonstrations at local elementary schools, as well as delivered information packets to teachers. I continued to help prepare the fruits and vegetables that were delivered to the schools.
Harvest of the Month, Center for Nutrition and Activity Promotion (CNAP)
California State University, Chico 09/2007-05/2008
I became involved with CNAP my first year at Chico State after talking with the foodservice instructor on campus. Through this internship, which lasted for two semesters, I was able to get a closer look at community nutrition. I was able to use my culinary history to help prepare fruits and vegetables by washing, cutting and portioning thousands of fruits and vegetables for local schools. I was also able to help demonstrate proper kitchen practices to other interns, such as hand washing, knife skills, and proper attire.
This internship also allowed me to become familiar with the CNAP program, and some of its staff on campus
