      WIC (The Special Supplemental Nutrition Program for Women, Infants, and Children)

    • Internship at the Oregon WIC State Office from September 6- October 14, 2011
    • Preceptor: Sara Sloan, MS, RD
      • Meetings attended:Office of Family Health Seminar, Oregon Nutrition Policy Alliance, Nutrition Council of Oregon, Three day WIC Breastfeeding Training, All Staff WIC Meeting, Nutrition and Local Services Team
      • Volunteer Opportunities: Food Day events at Portland State University, educating the public on the amount of commercials children see in a year for junk food and healthy nutrition
      • All Staff Wellness Presentation: Created and distributed a survey to the staff to obtain feedback on what topic(s) they would like to learn about for optimal health during the holiday season. I analyzed the results of this survey and created an outline and a presentation for the all staff meeting on November 2, 2011. The theme most popular to the staff, and the resulting topic of the presentation is Intuitive Eating.

 Food Service Rotation

  Patient Food Service at the Portland VA Medical Center      

    • From October 18- November 4, 2011
    • Preceptors: Pat Fischer, RD and Deanne Carlisle, Rd, LD, MBA
    • Working in the kitchen to learn about patient food service. Daily activities include taking and recording temperatures for all foods of all meals prepared. Working in collaboration with food-service management and other hospital dietitians to create, support, implement and follow up on projects.          
    • Examples of projects worked on:
      • The Enhanced Veteran Snack Project: Helped to create snack food list based on patient request. Along with the snack menu, I helped to create a chart of those snacks, based on specific diet restrictions. These sheets were delivered to the nursing staff for them to help the patients receive the snacks. I helped to organize the initial snack delivery to the two refrigerators that were available on the two floors being served. I also helped to teach the kitchen staff on who is responsible for what part of that project, and what needs to be done when.
      • Excess Food Donation Project: I collaborated with several other people on organizing and finding locations to donate excess prepared food from the VA kitchen.

 School Food Service Rotation at the Portland Public Schools Office

  • From November 8 - November 17, 2011
  • Preceptor: Whitney Ellersick, MS, RD
  • Meetings Attended: Vendor Meeting, Supply Chain Meeting, Menu Planning Meetings ( Elementary and Middle/High Schools), SEIU Union Meeting, Team meeting
  • "Field Trips": Heritage Foods tour and sampling, Abernethy Elementary School CRE (Coordinated Review Effort), Meek High School production records review
  • The Hiring Process: Interviewed candidates for substitute position and filled out corresponding paperwork, collaborated on decision of who to hire, call all candidates back to invite to come back or to inform them of decision not to hire, created information and paperwork packets for each of the new hires; Interviews conducted for assistant lead for Kelly Elementary position available
  • Projects: Journal Club Presentation about potatoes for breakfast in schools, presented at the Team Meeting; rearranging lunch menu items in reference to feedback received at menu meetings

  Marion County Health Department WIC in Salem, Oregon

  • From November 29 - December 9, 2011
  • Preceptor: Dale Erickson, RD
  • Work in the WIC clinic to better understand WIC practices and beliefs, as well as to learn to counsel clients. Interaction with staff members and clients of all backgrounds is vital. With clients, I was able to take height, weight and iron measurements. I worked within the TWIST data system to enter and retrieve client information for follow-up appointments and re-certifications.
  • I facilitated an in-service given to the WIC staff members. This in-service was to teach the staff about the change over from the CDC growth charts to the WHO growth charts for children from 0-2 years old. I researched the topic, presented the information, and answered staff questions.
  • Projects worked on: Re-creating a Healthy Living Class with creating an interactive handout. Created a recipe book for grains/cereals based on the WIC food list. Created a healthy newsletter for the month of January for the WIC staff. Used my craft skills to put together a fruit and vegetable mobile.
